Microwave blueberry jam: A quick and easy recipe from The Blueberry Cookbook by Sally Vargas.
Ingredients:
  • 2 cups fresh or frozen cultivated blueberries
  • 1/3 cup granulated sugar
  • Pinch fine sea salt
  • 2 tablespoons lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1/4 teaspoon vanilla extract
Instructions:
  • In a medium microwave-safe bowl, mix together the berries, sugar, salt, lemon juice, and lemon zest, ensuring the bowl is spacious enough for the jam to bubble while cooking.
  • Microwave the jam: Heat the berries in the microwave on high for 3 minutes, until the sugar dissolves, leaving it uncovered.
  • 1. Stir and microwave: Remove the bowl from the microwave, mix the ingredients well, and microwave for an additional 3 to 5 minutes until the jam reaches the desired setting point. Test the consistency by allowing a spoonful of jam to drip back into the bowl - it should be thick, not runny. Lastly, stir in the vanilla.
  • Prepare the jar: Use a spoon to transfer the warm jam into a fresh 8-ounce jar and seal with a lid. Refrigerate for up to one month.
