Ingredients:
  • 2 cups fresh blueberries
  • 0.75 cup water, divided
  • 2 teaspoons lemon juice
  • 1.5 teaspoons unflavored gelatin
  • 3 tablespoons white sugar
Instructions:
  • Combine fresh, juicy blueberries with a splash of water and a hint of lemon juice in a sturdy saucepan. Let the flavors mingle as it comes to a gentle boil, then lower the heat and simmer for 8 minutes, stirring occasionally until the mixture is perfect.
  • Let the gelatin soften in 1/4 cup of cold water.
  • Once the blueberries are removed from the heat, mix in the gelatin and sugar. Transfer the mixture into hot, sterilized jars and seal them. Let it cool for 12 hours and then store in the refrigerator.
