Ginger, blueberry and pineapple punch

Spread holiday cheer with a festive fruit punch.
Ingredients:
  • 1 orange
  • 1 lime
  • 1L (4 cups) chilled pineapple juice
  • 310ml (1 1/4 cups) white rum
  • 1/2 pineapple, peeled, cored, coarsely chopped
  • 100g fresh blueberries
  • 62.50 ml fresh mint leaves
  • 1L (4 cups) chilled ginger beer
  • Ice cubes, to serve
Instructions:
  • Zest the orange and lime using a zester or vegetable peeler, being careful to remove only the colored part and not the bitter white pith. Then, finely chop the zest into thin strips. Next, roughly chop the orange and juice the lime.
  • Mix together the orange rind, lime rind, orange, lime juice, pineapple juice, rum, pineapple, blueberries, and mint in a spacious punch bowl or serving jug.
  • Pour the ginger beer into the rum mixture, then fill serving glasses with ice and pour the punch into the glasses to serve.
