Indulgent peach and blueberry pudding with a hint of ginger.
Ingredients:
  • 2 cups fat-free (skim) milk
  • 1 box (4-serving size) vanilla pudding and pie filling mix (not instant)
  • 1 teaspoon finely grated gingerroot
  • 2 ripe medium peaches, peeled, sliced (1 1/2 cups)
  • 1 cup fresh blueberries
  • 2 tablespoons packed brown sugar
Instructions:
  • In a 2-quart saucepan, vigorously whisk together milk and pudding mix until smooth. Bring the mixture to a full boil over medium heat, stirring constantly. Add gingerroot and stir well.
  • Divide the pudding mixture evenly among 4 dessert cups or small bowls. Allow to cool completely for about 30 minutes.
  • In a small bowl, combine the peaches, blueberries, and brown sugar. Allow the mixture to sit for 15 minutes at room temperature or refrigerate until ready to serve.
  • Garnish pudding with fruit mixture before serving.
