Baked blueberry and peach meringues

Quick and easy yet impressive fruit desserts.
Ingredients:
  • 2 egg whites, at room temperature
  • 100g (1/2 cup) caster sugar
  • 250g drained canned peaches in natural juice
  • 125g (1 cup) thawed frozen blueberries
  • 20.00 gm almond meal
Instructions:
  • Preheat your oven to 220°C. Whip egg whites in a clean, dry bowl with an electric beater until they form firm peaks. Gradually add sugar, one tablespoon at a time, and continue beating until the sugar dissolves and the mixture becomes thick and glossy.
  • In a bowl, mix together peaches, blueberries, and almond meal. Divide the fruit mixture into four 185ml (3/4-cup) ovenproof ramekins and add a dollop of meringue on top. Bake in the oven for 7-10 minutes until golden. Serve right away.
