Homemade blueberry bagels: Simple and delicious recipe to try at home.
Ingredients:
  • 57.20 gm honey, plus extra to serve
  • 7g sachet dried yeast
  • 4.80 gm salt
  • 250.00 gm warm water
  • 500g bread and pizza plain flour, plus extra to dust
  • 125g fresh blueberries, plus extra to serve
  • Canola oil spray
  • 70.95 gm caster sugar
  • 10.00 gm bicarbonate of soda
  • 20.60 gm milk
  • 375g cream cheese, softened
  • 60g blueberries
  • 4.40 gm vanilla extract
  • 60g raspberries
Instructions:
  • In a large jug, mix together honey, yeast, half of the salt, and warm water. In a large bowl, combine flour and blueberries, then make a well in the center. Pour the honey mixture into the well and use your hands to combine everything until a dough forms. Knead the dough with an electric mixer and dough attachment for 5 minutes until smooth and elastic. Place the dough in an oiled bowl, cover with plastic wrap, and let it rest in a warm place for 1 hour and 30 minutes or until the dough doubles in size.
  • Shape dough into 12 smooth balls, and create a hole in the middle by gently pressing with a floured finger. Lightly flatten the balls and let them rest on a tray for 10 minutes to rise.
  • Preheat your oven to 200C/180C fan-forced. In a large saucepan over high heat, combine 2.5 liters of water and half of the sugar. Bring to a boil, then reduce heat to medium and simmer. Line a large baking tray with parchment paper and lightly spray with oil.
  • Mix bicarbonate of soda and the rest of the salt into gently boiling water. Add 4 bagels to the water. Boil for 2 minutes. Turn with a slotted spoon and boil for another 2 minutes. Transfer to prepared tray with a slotted spoon. Repeat process in 2 more rounds with the rest of the bagels.
  • In a small bowl, whisk together egg yolk and milk. Brush the mixture over the bagels. Bake in the oven for 15 to 20 minutes or until golden and fully cooked. Let them cool on a wire rack.
  • Combine cream cheese and the remaining sugar in a medium bowl. Divide the cream cheese into three portions. In a small saucepan, simmer blueberries with 1 tablespoon of water over medium heat for 5 minutes or until softened. Strain the blueberries through a fine sieve to extract juice. Refrigerate until cool. Mix vanilla extract into one portion of the cream cheese. Crush raspberries in a separate bowl, strain through a fine sieve into another portion of the cream cheese. Discard raspberry seeds. Combine the cooled blueberry mixture with the remaining portion of cream cheese.
  • Split the bagels in half. Fill a piping bag with a 1cm fluted nozzle with cream cheese, and pipe onto four bagel halves. Place the other halves on top. Repeat with the rest of the cream cheese and bagels.
  • Top the freshly toasted bagels generously with additional drizzles of honey syrup and a handful of extra fresh blueberries for an indulgent and flavorful finish.
