Elevated twist on a traditional breakfast favorite.
Ingredients:
  • 1.20 gm salt
  • 185ml water
  • 100g frozen blueberries, thawed
  • 2 tsp (7g/1 sachet) dried yeast
  • 70g caster sugar
  • 375g plain flour
  • 2000.00 gm (2 litres) water, extra
  • 1 egg yolk
  • 20.60 gm milk
  • 60g white sugar
  • Cream cheese, to serve
  • Blueberries, to serve
  • Raspberries, to serve
Instructions:
  • In a jug, mix together water, blueberries, yeast, and 2 tablespoons of caster sugar. Allow it to sit for 5 minutes, or until it becomes frothy.
  • In a large bowl, whisk together the flour, cinnamon, and salt. Create a well in the center of the mixture. Pour the yeast mixture into the well and gently mix until just combined. Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic. Place the dough in a large bowl, cover loosely with plastic wrap, and let it rise in a warm, draft-free spot for 30 minutes or until it increases in size by half.
  • Preheat oven to 180°C. In a large saucepan over high heat, combine extra water and remaining caster sugar. Bring to a boil, then reduce heat to a simmer.
  • Prepare the oven tray by greasing it with oil. Divide the dough into eight equal portions, then shape each portion into a ball. Use a lightly floured finger to create a hole in the center of each ball, then gently flatten them. Arrange the dough balls on the oiled tray and let them rest for 10 minutes to slightly rise.
  • Place 4 bagels in simmering water and cook for 3 minutes. Flip them with a slotted spoon and cook for an additional 3 minutes. Remove with a slotted spoon and place back on an oiled tray. Repeat the process with the remaining bagels.
  • In a bowl, combine egg yolk and milk and whisk until smooth. Brush the mixture evenly over each bagel and sprinkle with sugar. Bake in a preheated oven for 20 minutes until golden brown and cooked through. Allow to cool after removing from the oven. Serve toasted with cream cheese and berries, if preferred.
