Create a decadent blueberry syrup for a sweet topping on ice cream and desserts.
Ingredients:
  • 2 x 125g punnets blueberries
  • 80ml (1/3 cup) water
  • 60ml (1/4 cup) butterscotch schnapps
  • 70g (1/3 cup) caster sugar
  • 3 whole star anise
  • 2 x 7cm-long strips orange rind
  • 8 vanilla ice-cream slices, to serve
  • Almond wafers, to serve
Instructions:
  • In a saucepan over medium-high heat, mix blueberries, water, and schnapps. Let it come to a boil, then simmer on medium-low for 1 minute until slightly reduced.
  • Add the sugar, aromatic star anise, and fragrant orange rind to the pot. Stir gently until the sugar dissolves completely. Increase the heat to medium-high and bring the mixture to a boil. Then, lower the heat to medium-low and let it simmer for 5-10 minutes until the mixture slightly thickens. Allow it to cool before removing and discarding the star anise and orange rind.
  • Place two indulgent scoops of ice cream in each bowl and generously drizzle with the luscious blueberry syrup. Enjoy with delicate almond wafers on the side.
