Blueberry Pudding with Hard Sauce

Warm blueberry pudding cake topped with a scoop of cold hard sauce made with powdered sugar, butter, egg, and vanilla.
Ingredients:
  • 1 cup white sugar
  • 3 tablespoons shortening
  • 1 egg
  • 0.75 cup milk
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 cups blueberries
  • 2 cups confectioners' sugar
  • 0.66666668653488 cup butter, softened
  • 0.5 cup pasteurized egg
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease an 8- or 9-inch square baking dish.
  • In a large bowl, use an electric mixer to blend white sugar and shortening until smooth. Add egg and mix well. Stir in milk, then sift in flour and baking powder, mixing thoroughly. Gently fold in blueberries and spread the batter evenly into the baking dish.
  • Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • In a medium bowl, use an electric mixer to cream together confectioners' sugar and butter until smooth. Gradually beat in the egg, then stir in the vanilla. Refrigerate until ready to serve.
  • Drizzle the cool sauce on top of the warm pudding.
