Blueberry-Peach Cobbler

Indulge in a scrumptious blueberry and peach cobbler made with Original Bisquick® for a delightful fruity dessert.
Ingredients:
  • 8 medium fresh peaches (about 2 lb), peeled, each cut into 6 wedges
  • 1 cup fresh blueberries
  • 1 tablespoon cornstarch
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • Dash salt
  • 1 cup Original Bisquick™ mix
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons milk
  • 2 tablespoons butter or margarine, softened
  • 2 tablespoons granulated sugar
  • 2/3 cup chopped walnuts
  • 2 teaspoons milk, if desired
  • 1 tablespoon coarse sugar
Instructions:
  • Preheat the oven to 400°F. Combine the fruit mixture ingredients in a medium bowl and let it sit for 10 minutes to allow the sugar to extract juices from the peaches. Transfer the mixture to an ungreased 8-inch square (2-quart) glass baking dish. Bake uncovered for about 10 minutes or until the fruit is bubbling. Remove from the oven and give it a stir. Bake for an additional 10 to 12 minutes or until bubbly around the edges; make sure the fruit is hot in the middle for the biscuit topping to bake fully.
  • In a medium bowl, combine all biscuit topping ingredients excluding 2 teaspoons of milk and coarse sugar until a cohesive dough forms.
  • Place 6 dollops of dough onto the warm fruit mixture. Brush the dough with 2 teaspoons of milk and sprinkle with coarse sugar.
  • Bake for 25-30 minutes until biscuits are deep golden brown and the center is no longer doughy. Cool on a rack for 10 minutes before serving warm.
