Summer fruit cornbread cobbler: a sweet slow-cooker delight!
Ingredients:
  • 3 cups sliced fresh peaches
  • 1 pint blueberries
  • 1/4 cup sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon grated lemon peel
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 2 tablespoons sugar
  • 1/4 cup cold unsalted butter, cut into cubes
Instructions:
  • Prepare your slow cooker by spraying it with cooking spray. Add the fruit ingredients and toss to combine.
  • In a medium bowl, combine the Topping ingredients, working the butter into the mixture until it resembles coarse sand. The texture should allow you to pinch it together and hold its shape. Sprinkle over the mixture in the slow cooker.
  • Cook on High heat setting for 2 to 2 1/2 hours until the fruit is bubbling. Serve hot with a dollop of whipped cream or vanilla ice cream, if desired.
