Indulge in delicious blueberry jam on warm, buttered toast.
Ingredients:
  • 550g (2 1/2 cups) caster sugar
  • 500g blueberries
  • 20ml (1 tsp) lemon juice
  • 40ml (2 tsp) white wine vinegar
Instructions:
  • Preheat the oven to 100°C and chill a small plate in the freezer.
  • Prepare a large baking tray lined with parchment paper. Evenly sprinkle the sugar on the tray and bake in the oven for 10 minutes to warm it up.
  • In a large pan, combine the berries, lemon juice, vinegar, and 1/4 cup of water. Stir in the sugar over low heat until fully dissolved. Bring the mixture to a slow boil, skimming off any scum that forms on the surface. After 20 minutes, test the jam's consistency by spooning a bit onto a chilled plate and pushing it with your finger. Look for wrinkles and a skin to indicate readiness; if not, repeat the test. Cook the jam for 10 minutes more and retest until it reaches the desired set. Transfer the jam into sterilized jars.
