Tangy blueberry jam - the ultimate dessert topping.
Ingredients:
  • 2 pints (4 cups) blueberries, crushed (2 1/2 cups)
  • 3 cups sugar
  • 1 teaspoon grated orange peel, if desired
  • 1/2 cup water
  • 1 package (1 3/4 ounces) powdered fruit pectin
Instructions:
  • Combine fresh and juicy blueberries with a touch of sugar and fragrant orange peel in a roomy bowl. Allow the mixture to sit for 20 minutes, giving it a gentle stir now and then, until the sugar completely dissolves.
  • Combine water and pectin in a small saucepan. Bring to a boil, stirring constantly. Let it boil and continue stirring for 1 minute. Pour the hot pectin mixture over the blueberry mixture and stir constantly for 3 minutes.
  • Transfer the mixture quickly into freezer containers, allowing a 1/2-inch space at the top. Wipe off any excess mixture on the rims of the containers, then seal them. Allow it to sit at room temperature for approximately 24 hours until it sets.
  • For longer storage, freeze for up to 6 months or keep in the refrigerator for up to 3 weeks. Prior to serving, thaw the frozen jam and give it a gentle stir.
