Blueberry Sorbet

Blueberry Sorbet: Refreshing, intensely blueberry-flavored treat for hot days.
Ingredients:
  • 5 cups fresh or frozen blueberries, rinsed, stems removed and discarded
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Pinch salt
  • Fresh blueberries and sprigs of mint for garnish
Instructions:
  • In a large bowl, combine blueberries, sugar, honey, lemon zest, lemon juice, and salt. Mix well to coat the blueberries with sugar, then mash them with a potato masher.
  • Transfer the mashed blueberries to a blender and blend until smooth, about 2 minutes.
  • Set a sieve over a bowl and in batches, push the mixture through using a rubber spatula to strain out tough lemon and blueberry peel pieces.
  • Refrigerate the mixture for a minimum of an hour, then churn in your ice cream maker. Enjoy immediately for a soft sorbet or freeze for a few hours to achieve a firmer texture. Consume promptly for the best consistency and serve with fresh blueberries and a mint sprig.
