Delicious blueberry jam and cinnamon bread pudding, ideal for breakfast or brunch.
Ingredients:
  • Land o’Lakes Cinnamon Sugar Butter Spread™ for greasing dish
  • 1/2 cup Land O Lakes® cinnamon sugar butter spread (from 6.5-oz container)
  • 1 loaf (1 lb) firm white bread
  • 1/2 cup blueberry jam or preserves
  • 6 eggs
  • 2 1/2 cups half-and-half
  • 1/3 cup honey
  • Grated peel from 1 lemon (2 to 3 teaspoons)
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
Instructions:
  • Preheat your oven to 350°F. Grease a 13x9-inch (3-quart) glass or ceramic baking dish with a delicious cinnamon sugar butter spread.
  • Take the cinnamon sugar butter spread and generously spread 1/2 tablespoon onto a slice of bread. Next, spread 1/2 tablespoon of blueberry jam onto another slice of bread. Sandwich the slices together and repeat with the rest of the loaf until all the sandwiches are made.
  • Arrange the triangle-cut sandwiches with the points up in the baking dish.
  • In a medium bowl, whisk together eggs, half-and-half, honey, lemon peel, vanilla, and salt until smooth. Pour the custard mixture over the sandwich triangles in the dish and allow them to soak for 15 minutes.
  • Generously scatter fresh blueberries on top of the indulgent bread pudding.
  • Bake for 50-60 minutes until the custard sets and the toast points are golden brown. Let it cool a bit, then serve with extra cinnamon sugar butter spread.
