Indulge in this irresistible Hot Cross Bun Pudding, a decadent Easter dessert that will delight the whole family when topped with a generous scoop of double cream.
Ingredients:
  • 2 Chocolate Hot Cross Buns, split
  • 4 Indulgent Traditional Fruit Hot Cross Buns, split
  • 40g butter, softened
  • 160g jam
  • 6 Free Range Eggs
  • 375ml milk
  • 185ml thickened cream
  • 70g caster sugar
  • 1 tsp vanilla bean paste
  • 125g fresh or frozen raspberries
  • 125g fresh or frozen blueberries
Instructions:
  • Preheat your oven to 160°C and generously grease an 8-cup (2L) ovenproof dish.
  • Spread each bun half with butter on the cut side. Top the bun bases with jam, then assemble the buns in the pan with the jam-side up and cross-side up.
  • Combine the eggs, milk, cream, sugar, and vanilla in a bowl, then pour the mixture evenly over the buns. Let it sit for 10 minutes to soak.
  • Sprinkle the raspberries and blueberries over the top, then bake for 30-40 minutes until just set. Let it stand for 10 minutes before serving.
