Coconut creamed rice with custard apple and lime

Star anise-infused fluffy rice dessert, a cozy and aromatic winter treat.
Ingredients:
  • 400ml light coconut milk
  • 400ml milk
  • 70g (1/3 cup) caster sugar
  • 1 whole star anise
  • 110g (1/2 cup) white medium-grain rice
  • 15g (1/4 cup) flaked coconut
  • 1 lime
  • 1 custard apple
  • 16.00 gm brown sugar
Instructions:
  • In a medium saucepan over medium heat, combine the milk, caster sugar, and star anise.
  • Bring the mixture to a boil, then add the rice and cover the pot. Lower the heat and let it simmer gently for about 1 hour, stirring occasionally, until the rice is tender and has absorbed all the liquid.
  • Toast coconut in a frying pan over medium heat, stirring occasionally, for 2-3 minutes until golden brown.
  • Zest the lime using a zester or vegetable peeler, making sure to remove only the green part of the rind. Cut the lime zest into very thin strips after removing any white pith.
  • Cut the custard apple in half, remove the flesh segments and seeds. Place in a bowl with lime rind and toss to combine.
  • Scoop the rice mixture into individual serving dishes and dust with brown sugar. Spoon the custard apple mixture over the top and sprinkle with coconut before serving.
