Elevate creamed corn with exotic curry and creamy coconut.
Ingredients:
  • 8 ears fresh corn
  • 1 (13.5-oz.) can light coconut milk
  • 2 teaspoon curry powder or garam masala, plus more for garnish
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, for garnish
Instructions:
  • First, remove the kernels from the corn. Then, in a saucepan, combine coconut milk, curry powder, and ginger. Bring the mixture to a boil, then lower the heat and simmer until it thickens, about 5 minutes.
  • Combine corn, salt, and pepper in the pot and gently incorporate the seasonings. Allow the mixture to come to a boil, then lower the heat and let it simmer for about 10 minutes, stirring occasionally, until the corn is tender and the mixture becomes creamy. Finish by topping with fresh cilantro and a sprinkle of extra curry powder for added flavor.
