Quick and tasty corn fritters, perfect with yogurt mint sauce or as a sandwich base with tomato, pepper, and basil.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon curry powder, or more to taste
  • 1 egg
  • 0.5 cup soy milk
  • salt
  • 1 (16 ounce) can whole kernel corn
  • olive oil for frying, as needed
Instructions:
  • In a medium mixing bowl, sift together flour and curry powder. Create a well in the center, then gently combine egg, milk, and salt. Adjust consistency with more milk if needed. Whisk until smooth, ensuring no lumps remain. Allow mixture to rest for 10 minutes.
  • 1. Heat a heavy frying pan over medium-high heat with a generous amount of oil. Mix in the corn and drop spoonfuls of batter into the pan. Cook the fritters until they are golden brown on each side for approximately 2 minutes. Enjoy hot or cold.
