Ingredients:
  • 2 (about 450g) single chicken breast fillets
  • 18.20 gm olive oil
  • 1 large brown onion, halved, thinly sliced
  • 2 tsp cumin seeds
  • 1.25 gm ground cinnamon
  • 2 garlic cloves, thinly sliced
  • 440g (2 cups) parboiled white long-grain rice
  • 65g (1/3 cup) raisins, chopped
  • 875ml (3 1/2 cups) chicken style liquid stock
  • 2 egg tomatoes, finely chopped
  • 82.50 ml chopped fresh continental parsley
Instructions:
  • 1. Preheat grill on high. 2. Arrange chicken on a baking tray and grill for 3-4 minutes per side until cooked through. 3. Rest the chicken under foil for 10 minutes, then thinly slice before serving.
  • While the oil heats in a frying pan over medium heat, sauté the onion until it softens slightly for about 2 minutes. Stir in the cumin seeds and cook for 1 minute, then add the cinnamon and garlic, cooking until aromatic for about 30 seconds. Mix in the rice and raisins, ensuring they are coated in the flavorful onion mixture. Pour in the stock and bring to a boil. Reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender and has absorbed the liquid. Enjoy!
  • Fluff up the grains with a fork, then gently mix in the chicken, tomato, and parsley. Season with salt and pepper to taste, then serve by spooning onto plates.
