Quick and delicious microwave chicken pilaf with tender chicken, fragrant rice, and aromatic spices for a flavorful meal in minutes.
Ingredients:
  • 2 tsp ghee
  • 1.25 gm ground cumin
  • 1/4 tsp ground coriander
  • Pinch of ground cinnamon
  • 2 tsp Chicken-style Stock Powder
  • 40g (1/4 cup) frozen peas
  • 75g (3/4 cup) shredded cooked chicken
  • 125g tub 40-second basmati rice
  • 40.00 ml raisins
  • 45g (1/4 cup) roasted unsalted cashews
  • 62.50 ml canned lentils, rinsed, drained
  • 40.00 ml fresh coriander leaves
Instructions:
  • Place ghee in a microwave-safe mug and microwave until melted, about 1 minute on HIGH. Stir in spices and microwave for an additional 30 seconds. Then mix in stock powder and 1 tbsp water.
  • Layer the peas and chicken on top. Loosely cover with plastic wrap and microwave on HIGH for 1-2 minutes until heated through.
  • Prepare the rice according to package instructions, then transfer it to a bowl. Layer the chicken mixture on top of the rice and sprinkle with raisins, cashews, lentils, and coriander. Season to taste, gently mix everything together, and serve.
