Delicious mini pies with raisins, coconut, applesauce, cinnamon, and jasmine rice for a creamy and elegant treat.
Ingredients:
  • 2 eggs
  • 1 cup sugar
  • 0.25 cup butter, softened
  • 1.5 cups cooked RiceSelect® Jasmati® Rice
  • 0.5 cup flaked coconut
  • 0.5 cup raisins
  • 0.25 cup applesauce
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 (9 inch) unbaked pie crusts
  • Whipped cream
  • Cinnamon
  • Toasted coconut
Instructions:
  • Divide each piecrust in half and roll out each portion to line 4 (5-inch) mini pie pans.
  • Combine eggs, sugar, milk, butter, and rice until smooth; mix in the rest of the ingredients. Distribute the filling evenly among the 4 pie pans.
  • Place your pies on a baking sheet and bake them in a preheated 375-degree F oven for 15 minutes. Reduce the temperature to 300 F and continue baking for an additional 15-20 minutes until the center is set and the crust is a beautiful golden brown. If the crust starts to brown too quickly, simply cover the edges with foil.
  • For a delicious twist, bake the filling in a 10-inch piecrust and extend the cooking time by about 30 extra minutes.
