Moroccan Garbanzo Beans with Raisins

Delicious garbanzo bean and raisin rice dish, ready in 20 minutes for a perfect dinner.
Ingredients:
  • 1 1/3 cups uncooked regular long-grain white rice
  • 2 2/3 cups water
  • 1 tablespoon peanut or vegetable oil
  • 1 large onion, sliced
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1 cup diced acorn or butternut squash
  • 1/4 cup raisins
  • 1 cup vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 can (15 to 16 oz) garbanzo beans, drained, rinsed
Instructions:
  • Prepare rice according to package instructions.
  • In a 3-quart saucepan, warm oil over medium heat. Sauté sliced onion, chopped onion, and garlic for about 7 minutes until onions are soft, stirring occasionally. Add all remaining ingredients except garbanzo beans.
  • Bring the mixture to a boil. Lower the heat, cover, and simmer for about 8 minutes, stirring occasionally, until the squash is tender. Add the beans and heat through. Serve over rice.
