Slow-cooked Marrakesh chicken stew with sweet potatoes, garbanzo beans, tomatoes, and aromatic spices.
Ingredients:
  • 2 pounds skinless, boneless chicken breast halves, cut into 2-inch pieces
  • 2 large sweet potatoes, peeled and diced
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 2 large carrots, peeled and diced
  • 1 teaspoon dried parsley
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cinnamon
  • 1 (14.5 ounce) can diced tomatoes
Instructions:
  • Add the chicken, sweet potatoes, garbanzo beans, carrots, onion, and garlic into the slow cooker.
  • Combine parsley, salt, cumin, turmeric, cinnamon, and pepper in a small bowl. Season chicken and vegetables with the mixture, add tomatoes, and mix well.
  • Cook on High without peeking until sweet potatoes are fork-tender and sauce has thickened, about 4 to 5 hours.
