Genius taco bowl recipe made effortlessly in a slow cooker for a quick dinner.
Ingredients:
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 4 skinless, boneless chicken breasts
  • 1 green bell pepper, cut into long slices
  • 1 red bell pepper, cut into long slices
  • salt and ground black pepper to taste
  • 2 cups low-sodium chicken broth
  • 2 (15 ounce) cans black beans, rinsed
Instructions:
  • Mix together onion powder, cumin, oregano, chili powder, and paprika in a bowl to make flavorful taco seasoning.
  • Layer the chicken breasts at the base of the slow cooker, arranging green and red bell peppers around them. Sprinkle salt, pepper, and taco seasoning over the top. Carefully pour in enough broth to just cover the chicken.
  • Cook on Low in the slow cooker for 6 hours.
  • Use a wooden spoon to shred the chicken breasts into smaller pieces. Then, add the beans and let it cook on Low for an additional 30 minutes.
