Try this flavorful Lebanese pilaf with spices, caramelized onion, and fried eggs for a satisfying meat-free meal that will become a quick weeknight favorite.
Ingredients:
  • 105g (1/2 cup) green lentils, or brown lentils, washed
  • 20.00 ml ghee
  • 27.30 gm extra virgin olive oil
  • 2 tsp cumin seeds
  • 1 cinnamon stick
  • 3 large brown onions, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 1.25 gm ground cumin
  • 200g (1 cup) basmati rice
  • 500ml (2 cups) water
  • 4 eggs
  • 40.00 ml Greek yoghurt
  • 62.50 ml fresh coriander leaves
Instructions:
  • Place lentils in a saucepan and cover with water. Bring to a boil over high heat, then reduce to medium heat and simmer for 12 minutes until tender. Drain and rinse under cold water.
  • In a heavy-based frying pan with a lid, heat ghee and 1 tablespoon of oil over medium-low heat. Add cumin and cinnamon, stirring for 30 seconds. Mix in the onion, season with salt, and cook for 15 minutes until caramelized. Set aside 1 tablespoon of the onion mixture.
  • Sauté garlic and cumin until fragrant. Add rice, lentils, and water. Bring to a boil, then simmer on low heat for 15 minutes until rice is tender. Let it stand covered for 5 minutes, then fluff the grains with a fork.
  • Heat the rest of the oil in a non-stick pan over medium heat. Crack eggs into the pan and cook for 3 minutes until yolks are soft.
  • Top the rice with crispy fried eggs, creamy yogurt, the flavorful reserved onion mixture, and fresh coriander leaves for a delightful finishing touch.
