Ingredients:
4clovesgarlic, peeled
0.25 cupvegetable oil, or as needed
1lemon, juiced
Instructions:
Smash garlic in a mortar and pestle with a generous pinch of salt until it forms a smooth paste. Gradually whisk in oil, a teaspoon at a time, until creamy. Stir in the lemon juice.
