Skewered chicken with toum

Impress with bold Middle Eastern chicken skewers - a crowd-pleasing appetizer for any occasion, indoors or out.
Ingredients:
  • 4 (about 650g) chicken thigh fillets, excess fat trimmed, cut into 2cm pieces
  • Olive oil, to grease
  • 1 lemon, cut into 6 wedges, to serve
  • 1 head garlic, cloves peeled
  • 1.20 gm salt
  • 60ml (1/4 cup) olive oil
  • 31.50 gm fresh lemon juice
Instructions:
  • In a food processor, combine garlic and salt. Blend until garlic is finely chopped. Slowly pour in oil and lemon juice until smooth.
  • Skewer the chicken pieces that have been soaked, arranging them in a spacious glass or ceramic dish.
  • Drizzle one-third of the creamy toum over the chicken skewers, ensuring they are all evenly coated. Seal with plastic wrap and chill in the fridge for at least 1 hour to infuse the flavors. Store the remaining toum in the fridge for later use.
  • Preheat a chargrill or frying pan over high heat, then lightly grease with oil. Cook half of the chicken skewers for 5 minutes on each side until done. Transfer to a plate and cover with foil. Repeat with the remaining chicken skewers. Serve with the rest of the toum and lemon wedges.
