Sweet potato casserole with caramelised pecans recipe

Trendy spiced sweet potato with butter and brown sugar pecans - irresistible!
Ingredients:
  • 40.00 gm brown sugar
  • 100g pecans, toasted
  • 750g sweet potato, peeled, coarsely chopped
  • 30g butter
  • Pinch ground cinnamon
  • Sea salt flakes
  • Finely chopped fresh rosemary, to serve
Instructions:
  • Prepare a baking tray with baking paper. In a small frying pan over medium heat, mix the sugar with 2 tsp of water. Stir until the sugar dissolves, then simmer for 3 minutes until syrupy. Add pecans and coat evenly; spread on the tray. Let it cool completely before serving.
  • Steam the sweet potato until tender, then mash it until smooth in a bowl. Mix in butter and cinnamon until well combined. Season to taste.
  • Present the dish in a serving bowl and garnish with pecans. Sprinkle with sea salt flakes and fresh rosemary before serving.
