Decadent sweet potato casserole topped with a caramelized pecan crust, serves eight.
Ingredients:
  • 6 sweet potato -- cooked, peeled and mashed
  • 0.25 cup evaporated milk
  • 0.25 cup orange juice
  • 3 tablespoons butter, melted
  • 0.5 teaspoon ground cinnamon
  • 0.33333334326744 cup butter, melted
  • 0.75 cup packed brown sugar
  • 0.75 cup chopped pecans
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 2 quart casserole dish.
  • Combine the sweet potatoes, evaporated milk, orange juice, vanilla extract, sugar, salt, 3 tablespoons of butter, nutmeg, and cinnamon in a blender until smooth. Transfer the mixture into a greased casserole dish.
  • Combine the 1/3 cup butter, brown sugar, flour, and pecans for the topping. Sprinkle over the casserole and bake for 45 minutes or until heated through.
