Try these delicious eggless rolled sugar cookies with pecans and coconut for a sweet twist!
Ingredients:
  • 1 cup butter
  • 1 cup white sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 cup finely chopped red and green candied cherries
  • 1 cup flaked coconut
Instructions:
  • In a mixing bowl, cream the butter or margarine until softened. Gradually add the sugar and beat until fluffy. Pour in the milk and vanilla, then mix until well combined.
  • Combine the flour with a vigorous mix until fully incorporated, then gently fold in the cherries and pecans.
  • Form the mixture into three 7-inch long rolls, then coat them with the shredded coconut.
  • Chill the mixture for several hours or overnight by wrapping it in plastic wrap.
  • Preheat oven to 375°F for perfectly cooked dishes.
  • Slice rolls into delicate 1/4-inch pieces and elegantly arrange on a pristine cookie sheet. Bake for approximately 12 minutes, or until perfectly cooked. Transfer to a wire rack to gracefully cool.
