Cherry Cheesecake Balls

Cream cheese, cherries, and coconut rolled in graham crackers for delicious cherry cheesecake balls.
Ingredients:
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup white sugar
  • 2 teaspoons butter, at room temperature
  • 0.5 teaspoon vanilla extract
  • 0.5 cup flaked coconut
  • 8 maraschino cherries, chopped, or more to taste
  • 0.5 cup graham cracker crumbs
Instructions:
  • In a bowl, whip together cream cheese, sugar, butter, and vanilla extract using an electric mixer until smooth. Fold in coconut and cherries.
  • Spoon batter into graham cracker crumbs to form balls; roll once more and place on baking sheets lined with wax paper.
  • Chill in the refrigerator for 2 hours before enjoying.
