Indulge in sensational cherry cheesecake.
Ingredients:
  • 12 granita biscuits
  • 60g butter, melted
  • 6.00 gm gelatine
  • 500g cream cheese, at room temperature, chopped
  • 161.25 gm caster sugar
  • 3 tsp finely grated orange zest
  • 250g mascarpone
  • 250.00 ml cherries
  • Icing Sugar, for dusting
Instructions:
  • Prepare a 19cm x 9cm loaf tin by greasing and lining the base with baking paper that extends over the two long sides.
  • Pulse the biscuits in a food processor until finely chopped. Blend in the butter until combined. Press the mixture into the tin base using a spoon. Chill while preparing the filling.
  • In a small bowl, add 2 tbsp cold water and sprinkle gelatine over the top. Once softened, place the bowl in a pan of hot water and whisk with a fork until dissolved. Allow the mixture to cool.
  • Beat together cream cheese, sugar, and orange zest until creamy. Mix in the mascarpone and gelatine until just combined. Pour the mixture over the biscuit base and chill in the fridge for around 4 hours until set.
  • Top the dish with whole cherries and sprinkle with icing sugar before serving.
