Cherry cheesecake bars with an oatmeal cookie crust and cherry pie filling topping.
Ingredients:
  • cooking spray
  • 1 (17.5 ounce) package dry oatmeal cookie mix
  • 0.5 stick butter, chilled and cut into small pieces
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup white sugar
  • 1 egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking pan with cooking spray.
  • Transfer the cookie mix to a spacious bowl. Incorporate the butter until the mixture is crumbly and coarse. Set aside 1 1/2 cups of the crumb mixture; then firmly press the rest of the crumbs onto the bottom of the baking pan.
  • Place the crust in the preheated oven for 8 minutes to achieve a golden brown color. Once partially baked, carefully remove the crust and keep the oven running.
  • Mix cream cheese, sugar, egg, flour, and vanilla extract with an electric mixer until smooth and creamy.
  • Evenly spread the luscious cream cheese mixture over the partially baked crust. Layer on the delightful cherry pie filling, and finish by sprinkling the reserved crumbs on top for added crunch.
  • Bake in the preheated oven until lightly golden brown on top, approximately 35 minutes. Allow to cool for about 30 minutes, then chill in the refrigerator for around 2 hours. Cut into 16 to 20 bars.
