Indulgent sweet potato casserole topped with caramelized pecans, ideal for festive gatherings.
Ingredients:
  • 4 sweet potatoes, cut into chunks
  • 1.3333333730698 cups white sugar
  • 0.75 cup milk
  • 3 eggs, beaten
  • 0.75 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1.5 cups brown sugar
  • 1.5 cups chopped pecans
  • 0.75 cup all-purpose flour
  • 0.5 cup margarine, melted
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Place the sweet potatoes in a large pot and cover them with water. Bring to a boil, then lower the heat to medium-low and simmer until the potatoes are tender, which should take about 20 minutes. Drain the potatoes and transfer them to a large bowl.
  • Combine potatoes with a decadent blend of white sugar, creamy milk, eggs, salt, fragrant vanilla extract, and warm cinnamon. Smooth the luscious mixture into a baking dish.
  • Combine brown sugar, pecans, and flour in a separate bowl. Drizzle margarine over the pecan mixture and toss until it forms coarse crumbs. Sprinkle this delightful topping over the potato mixture.
  • Bake in a hot oven until the pecan topping becomes crunchy, which takes about 1 hour.
