Delicious sweet potato casserole topped with crunchy pecans, ideal for holiday dinners. Can be prepared in advance for convenience.
Ingredients:
  • 4 cups peeled, cubed sweet potatoes
  • 2 large eggs, beaten
  • 0.5 cup milk
  • 4 tablespoons butter, softened
  • 0.5 teaspoon vanilla extract
  • 0.5 cup packed brown sugar
  • 0.33333334326744 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 325°F (165°C).
  • Cook the sweet potatoes in a medium saucepan filled with water over medium-high heat until tender, for about 10 to 15 minutes. Drain and transfer to a large bowl.
  • Use a fork to mash the sweet potatoes. Then, mix in the eggs until well combined. Add the sugar, milk, butter, vanilla, and salt, and continue mixing until smooth. Finally, transfer the mixture to a 9x13-inch baking dish.
  • Create topping by combining brown sugar and flour in a medium bowl. Use a pastry cutter to incorporate butter until mixture resembles coarse peas; be careful not to overmix. Gently mix in pecans and sprinkle over sweet potato mixture.
  • Bake in the oven until topping is golden brown, around 30 minutes.
