Irresistible sweet potato casserole loved by all, even picky eaters. Freezer-friendly - simply omit pecan topping before freezing.
Ingredients:
  • 4 pounds yams
  • 2 eggs
  • 0.25 cup brown sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.125 teaspoon ground allspice
  • 0.125 teaspoon ground nutmeg
  • 6 ounces pecan halves
  • 0.33333334326744 cup brown sugar
  • 0.25 cup melted butter
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Pierce yams all over with a fork, then microwave on high until soft and heated through, about 20 minutes. Allow to cool, peel off skins, and transfer yams to a large bowl.
  • Combine yams in a bowl and beat until smooth. Gradually add eggs one at a time, blending well after each addition. Mix in brown sugar, melted butter, salt, cinnamon, allspice, and nutmeg until the mixture is light and fluffy.
  • Pour the mixture into a 3 quart casserole dish without greasing it. Arrange the pecans in a single layer on top, then sprinkle with the remaining brown sugar and drizzle 1/4 cup of melted butter over the top.
  • Bake in a preheated oven for 25 minutes or until golden brown and bubbly.
