Delightful zucchini cookies with walnuts, chocolate chips, and coconut for a happy snack time.
Ingredients:
  • 1 cup butter
  • 1.5 cups white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini
  • 2.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 cup chocolate chips
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and butter two baking sheets.
  • In a bowl, use an electric mixer to blend butter and sugar until light and fluffy. Add eggs and vanilla extract, continue beating until smooth. Gently fold in zucchini.
  • In a separate bowl, combine flour, baking powder, cinnamon, and salt, and whisk together. Add the flour mixture to the butter-zucchini mixture. Gently fold in coconut, walnuts, chocolate chips, and raisins. Spoon about 1 tablespoon of batter onto the baking sheets.
  • Bake cookies in the preheated oven until they are lightly browned, for about 15 to 20 minutes.
