Zesty blue cheese enhances quick zucchini and fire-roasted tomatoes medley.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 zucchini, halved lengthwise and sliced
  • 1 clove garlic, minced
  • 1 (14.5 ounce) can fire roasted chopped tomatoes (such as Hunts®)
  • 0.25 cup crumbled blue cheese
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Add zucchini and garlic, cover, and cook until zucchini is just tender, about 5 minutes. Stir in tomatoes and heat until warmed through. Remove from heat, then sprinkle blue cheese on top. Cover and let the cheese soften before serving.
