Crispy golden brown baked zucchini - a delicious garden-to-table treat!
Ingredients:
  • cooking spray
  • 2 large egg whites
  • 0.5 cup seasoned dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 0.125 teaspoon ground black pepper
  • 2 medium zucchini, cut into 1/4-inch slices
Instructions:
  • Preheat your oven to a toasty 475 degrees F (245 degrees C) and generously coat a baking sheet with cooking spray.
  • In a small bowl, vigorously whisk the egg whites until frothy. In a separate shallow bowl, combine the bread crumbs, Parmesan cheese, and pepper.
  • Coat zucchini slices in egg whites, then press into bread crumbs before placing on the baking sheet.
  • Place zucchini in the preheated oven and bake for 5 minutes. Flip zucchini over and bake until golden brown and crispy, for an additional 5 to 10 minutes.
