Crunchy baked zucchini fries with basil aioli

Crispy zucchini with basil aioli - a quick, flavorful side for BBQ or a tasty TV snack, ready in 40 minutes.
Ingredients:
  • Olive oil cooking spray
  • 3 small zucchini
  • 62.50 ml plain flour
  • 250.00 ml panko breadcrumbs
  • 82.50 ml finely grated parmesan
  • 125.00 ml pine nuts, finely chopped
  • 12.00 gm sesame seeds
  • 3.60 gm garlic salt
  • 18.20 gm extra virgin olive oil
  • 2 tsp finely chopped fresh basil leaves
  • 123.75 gm aioli
Instructions:
  • Preheat your oven to 200C/220C fan-forced. Place a wire rack on a large baking tray and generously spray it with oil.
  • Slice zucchini into 1.5cm x 8cm strips.
  • 1. Spread flour on a large plate and season with salt and pepper. 2. Lightly whisk eggs in a shallow bowl. 3. Mix breadcrumbs, parmesan, pine nuts, sesame seeds, and garlic salt on a plate. 4. Gently coat zucchini in flour, tapping to remove excess. 5. Dip zucchini in the egg mixture, then the breadcrumb mixture, pressing lightly to adhere. 6. Arrange on a prepared rack and spray with oil. 7. Bake for 15 to 20 minutes until golden and crispy.
  • In a small bowl, mix together oil, basil, salt, and pepper. Transfer the aioli to a serving bowl, then swirl in the basil mixture. Serve the zucchini fries with the flavorful basil aioli.
