Try these quick and delightful mini meatloaves for a simple family dinner option.
Ingredients:
  • 500g sweet potato, peeled, cut into 1cm-thick chips
  • 1 medium zucchini, grated
  • 800g pork and veal mince
  • 1 small brown onion, grated
  • 2 garlic cloves, crushed
  • 1 medium carrot, peeled, grated
  • 312.50 ml fresh breadcrumbs
  • 82.50 ml Steak Sauce
  • 68.75 gm Sweet Chilli Sauce
  • 61.88 gm reduced-fat whole-egg mayonnaise
  • Salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Grease a large baking tray and an 8-hole, 3/4 cup-capacity mini loaf pan.
  • On a prepared baking tray, place the sweet potato. Drizzle with oil and season generously with salt and pepper. Toss the sweet potato to ensure it's evenly coated, then set it aside.
  • Drain the liquid from the zucchini and mix it with minced meat, onion, garlic, carrot, breadcrumbs, half of the steak sauce, and 2 tablespoons of sweet chili sauce. Add salt and pepper to taste. Firmly pack the mixture into the holes in the pan.
  • - Place the meatloaves on the top shelf of the oven and the chips on the bottom shelf. Bake for 20-22 minutes until the meatloaves are just cooked through. - Remove the meatloaves from the oven and transfer them to a greased baking tray using a spatula. - Brush the meatloaves with the remaining steak sauce using a pastry brush. - Bake for an additional 10 minutes until browned and cooked through, then remove from the oven. - Cover loosely with foil to keep warm before serving.
  • Place the chips on the top shelf of the oven and bake for 5 minutes or until golden and tender. While the chips are baking, mix together the mayonnaise and remaining sweet chili sauce in a bowl. Serve the meatloaves with the chips, the mayo mixture, and salad leaves.
