Indulge in an effortless weekday treat with this delectable, glazed meaty tray bake.
Ingredients:
  • 750g beef mince
  • 1 small brown onion, coarsely grated
  • 1 egg
  • 15.60 gm tomato sauce
  • 17.10 gm barbecue sauce
  • 18.30 gm Worcestershire sauce
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 62.50 ml plain flour
  • 650g orange sweet potato, cut into 2cm cubes
  • 18.20 gm extra virgin olive oil
  • 100g green beans, trimmed
  • 1 bunch asparagus, trimmed
  • Finely chopped fresh flat-leaf parsley leaves, to serve
  • 85.80 gm tomato sauce
  • 93.23 gm barbecue sauce
  • 54.00 gm maple syrup
  • Dijon mustard, to serve
  • 2 tsp red wine vinegar
  • 2.50 gm smoked paprika
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a large baking tray with sides and line it with baking paper.
  • Prepare the Sticky Glaze by mixing tomato sauce, barbecue sauce, maple syrup, mustard, vinegar, paprika, and 1 tablespoon of water in a small bowl. Season with salt and pepper.
  • Combine mince, onion, garlic, egg, tomato, barbecue sauce, Worcestershire sauce, and parsley in a large bowl. Season with salt and pepper, then mix thoroughly. Divide the mixture into 4 equal parts and shape each into an 8cm x 10cm oval loaf.
  • Sprinkle flour on a plate and lightly coat mini meatloaves, shaking off excess. Place on tray and drizzle with some glaze. Bake for 30 minutes. Drizzle remaining glaze over meatloaves and add sweet potato to tray, drizzle with oil. Bake for another 30 minutes, adding beans and asparagus for the last 10 minutes. Cook until meatloaves are done and veggies are tender. Season with salt and pepper, sprinkle with parsley, and serve with extra mustard.
