Speedy zucchini and haloumi fritters

Whip up quick zucchini and haloumi fritters in 20 minutes for a delicious snack!
Ingredients:
  • 500g zucchini, trimmed
  • 250g pkt haloumi
  • 1 brown onion, trimmed, peeled
  • Peanut oil, to deep-fry
  • 62.50 ml chopped fresh mint leaves
  • 1 egg
  • 150g (1 cup) self-raising flour
  • Sea salt flakes, to serve
  • Ground cumin, to serve
  • Fresh mint leaves, to serve
  • Tzatziki dip, to serve
Instructions:
  • Grate the zucchini, haloumi, and onion using a food processor or box grater. Transfer to a large bowl, then mix in the mint. Create a well in the center and add the egg. Gently whisk the egg, then incorporate the flour and mix thoroughly.
  • Heat oil in a wok until it reaches 170C on a cook’s thermometer. Shape 1/3 cup zucchini mixture into a fritter using your hands. Add to the hot oil and fry, turning halfway, for 4 minutes until golden and cooked through. Transfer to a plate lined with paper towel using a slotted spoon. Repeat process to make a total of 12 fritters.
  • Present the fritters elegantly on a platter. Enhance with sea salt flakes, cumin, and fresh mint leaves. Accompany with a side of tzatziki for a delightful serving.
