Try this speedy chicken dinner with zesty zucchini and savory mushrooms - ready in just 30 minutes!
Ingredients:
  • 2 (5 ounce) boneless, skinless chicken breasts, cubed
  • salt and freshly ground pepper to taste
  • 1 tablespoon olive oil
  • 4 green onions, chopped
  • 2 green zucchini, cut in half lengthwise and into 1/4-inch slices
  • 8 large fresh mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 0.75 cup heavy whipping cream
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a skillet over medium heat, melt butter and sauté chicken until lightly browned, stirring often, for 5 to 7 minutes. Season with salt and pepper, then transfer to a plate and cover to keep warm.
  • In the same skillet, sauté green onions in olive oil until soft for about 2 minutes. Add zucchini slices and cook until softened for about 5 minutes. Mix in mushrooms. Add chicken back to the skillet and sprinkle with flour. Pour in cream and simmer until sauce thickens, for 3 to 5 minutes. Garnish with chopped parsley before serving.
