Creamy Alfredo tortellini with chicken and mushrooms.
Ingredients:
  • 1 (16 ounce) package refrigerated cheese tortellini
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken breast halves, cubed
  • 3 tablespoons butter
  • 0.5 pound sliced fresh mushrooms
  • 1 pinch garlic powder, or to taste
  • 2 cups heavy whipping cream
  • 0.33333334326744 cup grated Parmesan cheese
  • 3 tablespoons chopped fresh parsley
  • 1 teaspoon salt
Instructions:
  • In a large pot of lightly salted boiling water, cook the tortellini until they float to the top and the filling is hot, about 5 minutes. Drain.
  • In a large skillet over medium heat, sizzle chicken breast in vegetable oil until perfectly cooked through, for about 10 minutes. Take it off the heat.
  • In a skillet over medium heat, melt butter and sauté mushrooms with garlic powder until they begin to soften, approximately 3 minutes. Pour in heavy cream and bring to a boil. Lower the heat and simmer until slightly thickened, about 3 minutes. Stir in Parmesan cheese, parsley, and salt. Cook until the cheese is melted, around 1 minute.
  • Combine the tortellini and chicken with the rich mushroom-cream sauce and simmer for about 2 minutes until heated through.
