Whip up a comforting zucchini soup with basil and black pepper in just 30 minutes for a delicious, creamy meal.
Ingredients:
  • 4 cups shredded zucchini
  • 0.75 cup water
  • 0.5 teaspoon basil
  • 2 cups warm milk
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 2 tablespoons minced onion
  • ground black pepper to taste
Instructions:
  • Combine zucchini, water, salt, and basil in a pot and bring to a boil. Reduce heat to medium-low and simmer until zucchini is tender, about 15 minutes.
  • Transfer zucchini mixture to a blender, ensuring it is only filled halfway. Secure lid tightly, pulse briefly, then blend until smooth. Process in batches if needed.
  • Combine warm milk with flour and salt in a bowl and whisk until the mixture is smooth.
  • In a skillet over medium heat, melt butter until sizzling. Cook onions in the butter until translucent, about 5-7 minutes. Add pureed zucchini and milk, stirring constantly until it comes to a boil. Season with pepper to taste.
