Easy Cardamom Bread

Scandinavian spiced bread filled with raisins and nuts, topped with almonds and pearl sugar.
Ingredients:
  • 1 cup warm whole milk (110 degrees F (43 degrees C))
  • 0.33333334326744 cup warm water (110 degrees F (43 degrees C))
  • 0.5 cup white sugar
  • 2 tablespoons melted butter
  • 1 (.25 ounce) package active dry yeast
  • 3.5 cups all-purpose flour, or as needed
  • 1.5 tablespoons ground cardamom
  • 3 tablespoons ground cinnamon
  • 0.5 cup melted butter
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
  • 1 egg
  • 1 tablespoon water
  • 0.5 cup sliced almonds
  • 0.25 cup pearl sugar
Instructions:
  • In a mixing bowl, combine warm milk, warm water, sugar, and 2 tablespoons of melted butter. Whisk until the sugar dissolves. Sprinkle yeast over the mixture and let it sit for 5 minutes.
  • Once the yeast is foamy, mix in the flour, adding more if necessary to create a firm dough. Transfer the dough onto a lightly floured surface and knead until smooth and elastic, approximately 8 minutes. Place in an oiled bowl, cover with a cloth, and allow it to rise in a warm spot until doubled in size, around 1 hour.
  • Mix together 1/2 cup of sugar with cardamom and cinnamon in a small bowl; set aside. Flatten the dough and place it on a lightly floured surface. Roll it out into a 9x13-inch rectangle, then brush with 1/2 cup of melted butter. Sprinkle the sugar mixture, raisins, and walnuts over the dough. Roll it into a log, seal the edges, and transfer onto a parchment paper-lined baking sheet. Cover with a cloth and let it rise in a warm place until doubled in size, approximately 1 hour.
  • Preheat the oven to 350°F (175°C).
  • Score the top layer of the roll with V-shapes that don't quite meet in the middle along the length of the roll using a sharp knife to create a braided look. In a small bowl, beat an egg with 1 tablespoon of water. Brush the egg wash over the bread and sprinkle with almonds and pearl sugar for a finishing touch.
  • Bake the bread in the preheated oven until golden-brown, hollow-sounding when tapped on the bottom, for 30 to 35 minutes. Let it cool completely on a wire rack before slicing.
