Elevate banana bread with a sprinkle of crunchy pepitas on top.
Ingredients:
  • 300g self-raising flour
  • 200g caster sugar
  • 2 tsp finely grated orange rind
  • 1/2 tsp ground cardamom
  • 260.00 gm mashed banana
  • 2 eggs, lightly whisked
  • 150g butter, melted
  • 125ml milk
  • 50g pepitas
  • Butter, to serve
  • Honey, to serve
Instructions:
  • Preheat the oven to 180C. Grease and line a 10cm x 22cm loaf pan with baking paper, leaving the edges to hang over the sides.
  • In a big bowl, mix together the flour, sugar, orange rind, cinnamon, and cardamom. In a large measuring jug, whisk together the banana, eggs, butter, and milk. Combine the wet ingredients with the dry ingredients and stir until well blended. Pour the batter into the prepared pan and sprinkle evenly with pepitas. Bake for 1 hour or until a skewer inserted in the center comes out clean. Let it rest for 10 minutes before transferring onto a wire rack to cool.
  • Enjoy the warm, crispy toast slathered with butter and drizzled with sweet honey.
