Banana bread with extra moisture and flavor, made healthier with yogurt instead of butter.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 cup butter
  • 0.125 cup nonfat plain yogurt
  • 0.75 cup brown sugar
  • 2 eggs, beaten
  • 2.3333332538605 cups mashed overripe bananas
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan.
  • In a big bowl, mix flour, baking soda, and salt. In another large bowl, use an electric mixer to beat butter, yogurt, and brown sugar until light and fluffy. Add room-temperature eggs one at a time, mixing well after each addition. Stir in mashed bananas until fully combined. Gently fold banana mixture into the flour mixture until just combined. Transfer batter to a loaf pan.
  • Bake in a preheated oven for 60 to 65 minutes or until a toothpick comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
